VINIFICATION AND AGEING
|
Must is made by direct pressing of de-stemmed grapes. Static debourbage and must fermentation at a temperature of 16ºC Bottle-fermented at 13ºC Minimum ageing of 36 months in cellar.

VISUAL ANALYSIS
|
Pale yellow wine with greenish reflections. Continuous and long lasting bubbling; crown formation in appropriate glass.

SMELL ANALYSIS
|
Intense and long lasting aromas due to long ageing; very refined and elegant, with slight smells of honey and dried fruits, which blends well with the typical smells of the different grape varieties offering a touch of winter apples and tropical pineapple.

TASTE ANALYSIS
|
A soft bubbling is felt on the tongue. Its integrated fizz makes this wine more palatable. It is dry but pleasant on the palate; it leaves a fresh feeling with slight flavours of pineapple, apple and other fruits. Its after taste is marked and long lasting.
