VINIFICATION AND AGEING
|
Maceration time from 10 to 12 days, according to T.P.I. Then fermentation in a stainless steel tank, with a controlled temperature of 24-26 degrees, to extract all the aromas of both varieties.The garnatxa (2017 vintage) is over 12 months old in 225-liter French oak barrels. Syrah is a young wine from 2019 without going through the barrel.

VISUAL ANALISIS
|
Intense ruby color, clean, and'slimy' when removing the glass, because it leaves a wide and persistent tear.

SMELL ANALISIS
|
Red fruits, black cherry, violet peppers and cloves typical of the varieties and dried fruits, black licorice, leather, tobacco, due to aging in barrels.

TASTE ANALISIS
|
Very silky, pleasant, it has a great tannin that makes it subtle, very elegant and persistent.

GASTRONOMY
|
Roasted meats, white meats accompanied by powerful sauces, stews and casseroles, all kinds of cheeses, especially sheep's cheese, complete salads (with nuts, chicken, sauces), rices of meat, risottos, mushrooms, legumes and sausages. Powerful fish, like sardines.
